The E & B Lab moka works in the opposite way to traditional moka pots
We try to reduce the pressure to avoid that the steam can break the coffee puck and create channelling, a higher temperature would also burn the coffee
For the moka pot E&B lab developed a filter with more and smaller laser cut holes (0.2mm diameter) than the fewer and larger ones (0.8mm diameter) of traditional moka - this allows a perfect extraction by avoiding high pressure water that will damage the coffee cake.
A cleaner beverage is obtained thanks to the reduction of the fine coffee particles in the cup, in this way the sweetness is empahasised and the bitterness reduced.
